Choice Cuts is a compilation from Carcass, the British extreme metal band, issued by Earache Records. It came out on 29 June 2004 and sits in the death metal corner of the label's catalogue.

The record arrived between the band's 1996 album Swansong and their return with Surgical Steel in 2013, so it belongs to the years when Carcass were not making new studio records. Their full run of albums began with Reek of Putrefaction in 1988 and Symphonies of Sickness in 1989, then moved through Necroticism: Descanting the Insalubrious and Heartwork. As a collection, it gives newer listeners a way into that body of work without committing to the whole discography.
